Hi. I’m Amy. You probably know me from my online cooking show, Eating Low with Amy, which can be seen on YouTube, ifood.tv, onlinecooking.net, as well as on the Eating Low web site. In late January 2007, I started a low carb diet but was having a hard time finding low carb recipes that were lower fat - most of the recipes I found used a lot of cheese, cream, and butter (all things I was trying to cut down on). I started adapting recipes to fit my new way of eating and soon realized that other people might like my recipes too! I like making videos so I started filming myself making my recipes. My web site and cooking videos have taken off nicely. In July 2007, I published Eating Low with Amy - Basics, a cookbook filled with the recipes I ate while losing 54 lbs in 4 months.
I try to keep my recipes low hassle. My recipes don’t have a ton of ingredients or too many complicated steps. They are just simple, healthy recipes tailored to the low carb lifestyle, but they can be a part of any way of eating. I encourage you to take my recipes and make them your own by adapting them to suit your individual tastes and needs. My viewers know that if I can make it, so can they!
