New recipe posted - Beef in a Bag

I made a really great recipe video last night - Beef in a Bag. If you are afraid to cook beef (like I am) or if you think it's too hard, you have to try this recipe. I used what my store calls "fajita beef" (which I think is skirt steak that they have pre-cut into strips). Using pre-cut meat saves time and if you are like me and hate to cut raw meat saves you from fighting with the knife. I finally got a new video up! I have a new video camera and new video editing software that I'm still getting used to, but I'm able to do a lot more with the videos now (or at least without my computer crashing every 5 seconds)! I’m finally back!

After being sick for 2 weeks (and still am not completely better), I'm back to making my recipe videos. This was the worst cold! I must be feeling better because I spent all weekend shopping. I got gifts for my niece and nephews and got a big Dutch oven for myself so I can make my Christmas Eve pot roast at my parents' house. Speaking of pot roast, I just posted the pot roast video so go check it out. I made it with carrots (since that's the way I'll make it Christmas eve - this was a test run) ...

Hearty Low Carb Chili for a Cold Day!

I just uploaded a video recipe for low carb Hearty Chicken Chili. It's getting colder out so it seemed like the perfect meal for today. I hate cold weather. I bought a big poofy coat today! I posted a new cooking video (http://www.eatinglow.com/ep42PBJcookies.htm). It's called Peanut Butter and Jelly Cookies. They are so good! I had to go get a mixer because mine has disappeared. These cookies just might be more evil than the evil protein cookies! I ate way too many of them yesterday but I actually was down a pound this morning so go figure!

I should have at least one and maybe two video recipes up by tomorrow. One is a dessert and the other will be a salmon recipe. I just have to go to the store tomorrow morning to get the ingredients. I made chicken satay tonight. I didn't have the coconut milk so I couldn't make the version on my web site but here's what I used instead: 1/3 c peanut butter 1/3 c water 2 TB lime juice 2 TB soy sauce dash of cayenne Whisk together and dip your chicken in it! Yummmmmm!

New Video posted - Hot German "Potato" Salad

I posted the Hot German "Potato" salad recipe on my site. I love german potato salad but I modified it to use cauliflower instead of potatoes and it includes turkey kielbasa. German potato salad is usually more of a side dish, but I used more turkey kielbasa so it's more like a meal in this version. Very tasty and easy!On a side note, I'm a huge fan of the Steamfresh frozen veggies (by Birds Eye). You microwave them right in the bag and the bag poofs up while its steaming them.
