Ep. 1 - Rotel Chicken

Tada! My first episode! I learned a lot doing this first one. My next video will definitely be shorter. This one is in two parts - about 10 minutes total. It turned out pretty well I think! Stay tuned for more episodes! 

Recipe:

  • Chicken breasts (I used 3)
  • 1 can Rotel tomatoes

Preheat oven to 350 degrees. Rinse chicken and place in baking dish. Poke holes in chicken with fork if desired and dump can of Rotel tomatoes (including juice) all over chicken. Cook for 45 minutes. Check for doneness and cook a few minutes more if needed.

Nutrition:

The Rotel Tomato can says it has 4 carbs per serving, with 2.5 servings per can so I figured 10 carbs for the whole can of tomatoes. Divide that by the number of servings you get from the final dish (in my case - I got 4 serving out of 3 chicken breasts so the carbs per serving were 2.5).
