Ep. 5 - Diet Orange Soda ChickenThis is one of my favorite meals. I make this a lot! This is a recipe you can play around with - add more soy, less soda, cook for a longer/shorter amount of time. It's really up to you. Recipe:
Pierce chicken with a fork and lay in a glass or metal baking dish. Pour soda and soy over top. Cover and refrigerate overnight (I only did for half a day). Bake at 350 degrees for 1 to 1 1/2 hours. I basted it every now and then while it was cooking. Skin will be brown and crispy - yummy! Mine wasn't super dooper crispy but it did have a good brown top and was very juicy. It sort of reminds me of orange chicken from a chinese food place. Video:
Nutrition:The only carby thing in this recipe is the soy sauce so check the bottle for carb counts but not all the soy will cook into the chicken so I wouldn't worry about it! |
