Ep. 5 - Diet Orange Soda Chicken

This is one of my favorite meals. I make this a lot! This is a recipe you can play around with - add more soy, less soda, cook for a longer/shorter amount of time. It's really up to you.

Recipe:

  • Chicken Breasts (I did 3)

  • Can of diet orange soda

  • 1/3 c soy sauce                      

Pierce chicken with a fork and lay in a glass or metal baking dish. Pour soda and soy over top. Cover and refrigerate overnight (I only did for half a day). Bake at 350 degrees for 1 to 1 1/2 hours. I basted it every now and then while it was cooking. Skin will be brown and crispy - yummy! Mine wasn't super dooper crispy but it did have a good brown top and was very juicy. It sort of reminds me of orange chicken from a chinese food place.

The only carby thing in this recipe is the soy sauce so check the bottle for carb counts but not all the soy will cook into the chicken so I wouldn't worry about it!
