This turned out super yummy! I had originally planned to put capers in it,
but my capers disappeared somewhere between the store and my house (the missing
capers caper?). So i used the green olives instead. This had a really
"sophisticated" flavor - which is why I said it was restauarant quality - it's
very complex - not your average slab of tilapia!
Recipe:
2 tilapia filets (4 oz total)
1 clove garlic minced
3 slices lemon
6 cherry tomatoes cut in half
5 green olives
sprinkle of parsley, salt, pepper
Spread tinfoil on a baking sheet and preheat oven to 350 degrees. Spray PAM
on tinfoil and place the lemon slices in the middle of the tinfoil. Place the
tilapia on top of the lemon slices. Top that with the garlic, tomatoes, and
olives and sprinkle with parsely, salt, pepper, or any other seasonings you
want. Fold in sides of tinfoil to make a packet and cook for 30 minutes or until
fish flakes easily with a fork.
