Ep. 29 - Italian Skillet

I loved the ground chicken taco salad so much I had to come up with more variations! This is a simple skillet meal that you can modify to suit your particular taste. So easy!

Recipe:

  • Ground Chicken
  • 1/2 small can tomato sauce (or more if needed)
  • 2 Handfuls of greens peppers, red peppers, and onions
  • Spices (if desired)

Brown the ground chicken in a skillet until it's no longer pink. Add peppers and onions to skillet and cook for a few minutes. Add 1/2 can of tomato sauce to start. Add a sprinkle of splenda to tomato sauce if desired. Add any seasonings (basil, oregano, garlic powder, salt, pepper) as desired.

  • Tomato sauce - 6 carbs for 1/2 cup (this gets spread over multiple servings)
