Ep. 30 - Coconut Lime ChickenI love exotic food like Thai or Indian dishes. This recipe has a bit more fat and calories due to the coconut milk. You can lower the fat/calories by using lite coconut milk or using less coconut sauce on the grilled chicken. Recipe:
Marinate chicken in 1 1/2 TB lime juice. Grill chicken on an outdoor grill or George Foreman grill. Warm coconut milk over low heat. Season with salt and a pinch of cayenne. Add lime zest, if desired. Add the remaining lime juice to coconut mixture. Pour sauce over chicken and garnish with scallion and cilantro. Squeeze lime juice over finished dish, if desired. Video:
