Ep. 31 - Larb

Larb is a thai dish that includes spiced ground chicken served over lettuce. There are soooo many great flavors in larb so don't let the ingredients scare you! It's really easy to prepare.

Recipe:

  • 1 lb ground chicken
  • 1 1/2 TB fish sauce
  • 2 TB lime juice
  • 3 TB chopped mint
  • 3 TB chopped cilantro
  • 2 TB chopped shallots
  • 2 spring onions, chopped
  • 1/2 tsp cayenne pepper
  • 1 tsp chili sauce (thai chili sauce - lowest carb you can find)

Brown ground chicken in a skillet until cooked. Add fish sauce and lime juice. Add cilantro, spring onion, shallots, mint, cayenne, and chili sauce. Serve over lettuce leaves. You can add cucumbers or tomatoes too. Garnish with cilantro. Serves 4.
