Ep. 34 - Pan-Cooked Jumbo Shrimp

I love these big, juicy shrimp. They are so easy to cook right in their shells. You can use any marinade you choose. I actually used Stubb's Chicken Marinade, but Light Done Right Italian Dressing or any other lower carb marinade would work.

Recipe:

  • ½ lb jumbo shrimp
  • marinade of your choice - just enough to cover the shrimp plus a little to splash on towards the end

Rinse shrimp and place in bowl. You can keep the shells on. Marinate shrimp for 30 minutes in marinade of your choice. Spray PAM into a skillet. Cook shrimp for a few minutes on each side. Shells will turn pink and shrimp will become opaque when they are ready. Peel off the shells and eat.

You can also grill the shrimp on a grill by placing them on a skewer.
