Ep. 35 - Zucchini Hash Browns

These would be tasty for breakfast, lunch, or dinner!

Recipe:

  • 1 zucchini or summer squash, grated
  • 1-2 eggs
  • 1 TB grated onion
  • seasonings, as desired

Grate zucchini and onion. Add 1-2 eggs, any seasonings you like, and mix until blended. Spray a skillet with PAM. Drop a spoonful of the mixture into the pan and fry until brown. Flip and fry the other side. Serve with low carb ketchup, fat free sour cream, or your choice of condiments.
