Ep. 43 - Easy Pesto Chicken

This is super simple to prepare.

Recipe:

  • 1 lb chicken breast tenderloins (or regular chicken breasts)
  • 1/2 c pesto
  • 2 oz mozzarella cheese

Preheat oven to 375 degrees. Spread 1/4 c pesto in the bottom of a baking dish. Place chicken on top of pesto. Top with the rest of the pesto (1/4 c). Bake for 25 minutes. Sprinkle with mozzarella cheese and bake for 5 minutes more or until chicken is done.
