Ep. 50 - Parsnip Fries

This is one of my favorite snacks! I actually like these better than real fries! They are more of a maintenance food because they are higher in carbs, but I eat them often and they don't seem to affect my weight at all! While they have a high glycemic index number, their actual glycemic load is very low - basically, you'd have to eat a ton of them to get much of an effect on your blood sugar! All I know is - these are tasty!

Recipe:

  • 2 parsnips, peeled and chopped into fry shapes
  • olive oil
  • seasoning

Preheat oven to 450 degrees. Peel the parsnips like you would a carrot. Chop into fry shapes. Drizzle with a touch of olive oil and spread the oil over all the parsnips with your hands. Place on a baking sheet and sprinkle with your favorite seasoning. I use Montreal Chicken Seasoning. Bake for 20 minutes. I like these with Spicy Ranch dressing.

Cooking time: 30 minutes

A cup of raw parsnips has 17g carbs (7g fiber) so they are a bit higher in carbs.
