Ep. 51 - Zucchini Layered Quiche

This recipe was submitted by Lannie and it's so easy and tasty!

Recipe:

  • 2 zucchini, sliced thin
  • crumbled cooked bacon (I used about 6 slices)
  • 1/2 c to 1 c cheese (approx)
  • 5 eggs
  • 1/2 c to 1 c cream (half in half or heavy cream)
  • salt and pepper

Preheat oven to 350 degrees. Cook bacon and crumble it. Slice zucchini into thin slices. Mix eggs and cream in a bowl. Spray a pie plate with cooking spray or grease with butter. Place a layer of zucchini on the bottom of the pie plate. Put zucchini around the sides as well. Add a layer of bacon and then a layer of cheese. Add another layer of zucchini and then another layer of bacon and then cheese. Pour the egg/cream mix into the pan. Top with cheese. Bake for 35 minutes or until set.
