Ep. 8 - Chicken Parm

My friend is visiting from NY and she's italian so we wanted to make an italian meal that we both could eat. This is my compromise meal. I made a spaghetti sauce that I could put on chicken and she could put on her pasta. This came out really good!

Recipe:

  • 1 15 oz can tomato sauce

  • Half of the tomato sauce can of water

  • 2 spoonfuls tomato paste

  • 1 packet splenda

  • spices - basil, oregano, garlic powder, etc.

  • Chicken breasts - thin cutlets

  • Shredded parmesan

You can make the sauce ahead of time to save time. Add tomato sauce, 1/2 can water, 2 spoonfuls tomato paste, packet of splenda, and any italian spices you like to a pot and bring to boil. Turn heat down and simmer for 1 hour. Add a thin layer of sauce to a glass baking dish. Place chicken cutlets in pan on top of sauce. Spoon some sauce over chicken breasts and add a sprinkle of parmesan. Bake in a 350 degree oven for 40 minutes (or longer if needed). You can add more sauce or parm if desired at the end.

This recipe is sort of flexible in how you make it so it's hard to figure out the carb count but a quarter cup of tomato sauce has approximately 3 carbs.
