Italian Chicken

 

Chicken Breast
1/8 cup lowfat or fat free italian dressing
2 TB low carb pasta/pizza sauce (pizza quick is pretty low carb)
Sprinkle of parmesean (optional)
Handful of Spinach

Marinate chicken for at least 30 minutes. Grill chicken for 6 minutes each side or til no longer pink in the middle (if using a George Foreman grill - cook approx. 6 min total or until no longer pink in the middle). Put spinach on a plate and put chicken breat on top. Top with pasta/pizza sauce and a sprinkle of parmesan if desired.

 

Chicken Kebab

 

Chicken breast cut into 1.5 inch chunks
Green pepper
Mushrooms
Onion
PAM Spray
McCormick Montreal Chicken Seasoning

Thread chicken and veggies onto a skewer. Spray with PAM and sprinkle with Montreal Seasoning. Grill for 5 minutes. Turn over and grill 5 minutes or until not longer pink in the center (if you use the George Foreman, grill for 5 minutes total or until chicken is no longer pink in center).

 

Bikini Problems?

 

If you've lost weight but have the stretch marks to prove it, you may not feel comfortable in a bikini! You can still find a super sexy suit that shows some skin but covers up those marks! I recently got a Victoria Secret catalog with their sale items and they currently have several 1 piece suits with various different kinds of cutouts. The cutout one pieces are nice because they show some skin but cover up key areas like the tummy or hip area where stretch marks might appear. Check it out if you are tired of plain old one pieces or tankinis!

 

1.5 lbs to Goal!

If I can toot my own horn for a moment...I am 1.5 lbs to goal! I can't believe that a little over 4 months ago I was 50+ lbs heavier! I haven't been this weight since the early 90s - probably around the time Nirvana was just getting popular! I can't wait to get to goal. I'm a little scared of maintenance but I know I have the tools to lose any weight I might gain so maintenance isn't looking so scary!
